I have a fiance who lives in Nova Scotia and I plan to move to Canada with him. I just recently received my associate's degree in child development (California) and was wondering if I was able to use my degree over there or would I have to take more classes? I would also like recommendations on the easiest way to move to Canada for us. I hear so many different ways in which might be better for us.

Once you are either married or common law (common law means you have lived together continuously for at least one full year) - your fiance will be able to sponsor you for PR through family class. This is be best / easiest route for you to move to Canada. For discussions about this process, read through the spousal sponsorship process on the CIC web site and join the Family Sponsorship section of the forum.

I can't comment on the use of your degree.
