My employer had the interview today. If case officer has asked for more documents and didn't show any concern then should we consider that case officer will be sending the approval after seeing those documents?

Ideally. But you never know until your employer has positive LMIA in their hand. It shouldn't take more than a week from the interview

Depends on the stream. GSS, high wage, low wage etc. Average Processing times are on the website for employers applying for a LMIA. Where do you live?

Reply to what? You still need a LMIA and then closed work permit. There is nothing you can do until the employer receives the LMIA.
