I read so many times and have been advised to have explanatory letters in our package.
Question is... should these letters be written by sponsor? Applicant? Or can we have them
written together as a couple? My husband is applicant and his only visits few times a year
from the UK (always free to enter Canada as visitor). Do we need to include our mailing
address on the letters like a formal letter?

What did you do? Any good tips?

Always good to have cover letters to your application explaining things and documents provided and explaining more in detail why you've enclosed these documents to thwart off getting queried on things and wanting more information on that subject when you've already covered that ground on. Keep it simple and self explanitory and rule out anything they might question on to avoid causing any delays and have it as straight forward as possible for them :)
 
Even if it's not mandatory for spousal, I've included cover letters from my wife explaining how we're planning to support ourselves.
Also included letters from my parents, my grandfather and her parents, showing support about our relationship.

Writing the letter from myself (sponsor), or from my husband (the applicant?), or both, as a couple?
 
I wrote all the letters explaining, what I am submitting (for example:- Call records explained in a letter that, she is calling me everday, that is her record and this is my record). SO YOU CAN WRITE LETTERS
