Letters of employment, are all needed or just enought to prove the 3 years ofexperience

If I have collected enough letters to prove 3 years of experience abroad, do I need to provide more letters? even if it is just a 2 months freelance job? or I can just skip that one even though is written in my wok history?
I know it is better to gather more than you need in case some of them get rejected, but I had a lot of short contracts and it is a nightmare to collect all of them.

only include whatever you need to proof 3 years .. anything more you won't get points for nor will it add anything to your application but complexity
