I feel like I saw somewhere on the application guide that you have to inform CIC if there's a change in employers but I can't find it now. Maybe I imagined it or maybe it was before the new rules took place.

I did search the forums but didn't find anything concrete after Jan 2013.

You should let CEC know, it is in the best interest of your papers! You need to keep them updated on your situation at all times and this is a positive situation.
Even though, it does not matter as , I am sure, when you applied, you applied only after you fulfilled all eligibility requirements!

But, I would, if I were you!

I see it mentions "Please inform the visa office of any changes in your application (e.g. birth or adoption of a child, marriage or common-law relationship, new occupation or employer, change of address, change of e-mail address, change of immigration representative, etc)." - Since I just became unemployed, I'm guessing I should just inform them when I get a new job?

I didn't tell them when I got laid off, but I did inform them when I got a new job.
