How far back do we have to get work references for? Do you think it would only be for the last one or two jobs, or perhaps within the last 5 years. What are the recommendations as I couldn't see anything specific on the CIC website.

as per my knowledge, you should show appointment letters/job experience letters etc for your latest 4+ (shoyld be 5) years, if your job experience is more then that then i guess you can just mention the job with atleast one proof of your job. because as they say in the SCHEDULE 3 "4 years or more" it SEEMS they will be tracking only 4+ years.

Last 4 years should be fine. You need to show the reference for that job for which you claiming point.
