I applied under the Express Entry and will receive my ITA today - this was partly due to a job-offer I had (cutoff 451 pts. - I have 504 pts.) although I would still remain above the threshold without this offer.

Now, my employer offered me a full-time position until December, 2019 - I agreed to this offer as I could use the +50pts. on my application, but as the job pays relatively little (compared to the local market) and the daily duties are not challenging at all for me, in reality I am contemplating to find a new job as soon as I receive my PR.

Would the IRCC consider it misrepresentation, or even cheating the system, if I claim points for a job offer but quit my job (and forfeit the job offer) as soon as I receive my PR? Do they hold the power to for example revoke PR if they find out about something like this?
 
No - it's fine. You can take another job once you are a PR.
