I am a substitute teacher and when I read the part about my employer having to write down my hours I did not know if Substitute teaching was an ok proffession to be in when sponsoring my common -law partner. I have no regular working hours. Is this ok if I make enough to each year to qualify as a sponsor through this job?

You don't have to meet a minimum income, so what they are more interested in is your job history. It's perfectly OK to be a substitute teacher without regular hours.
