I doubt it is even possible. You probably still need to upload your quarantine plans in the Arrivecan app before your arrival in Canada. Currently, the only proven exceptions were from the land border with US.
 
Thanks - we're coming from Europe, so the US road angle won't apply to us.

I guess that leaves us with the choice between:
1) hard landing before our CoPRs expire - hard when we expected to have a longer period to 'shut up shop'
2) asking for an exemption letter to be allowed to land and return home to sort out our affairs

Does anyone have an idea of whether 2) is at all possible these days?

It has been discouraged since Covid came along but people have still been doing it. They have come, done their landing, then after their quarantine finished left the country. You would still have to meet all the requirements of using the ArriveCan app, have a quarantine plan in case it is necessary etc., I don't know any of the details of what they have done apart from that. I doubt an exemption letter would be possible.

TBH, I still don't quite get how, if people land, then return to their original country, get their PR cards mailed to them in their original country, then fly back in to Canada with the PR cards, that the border guards don't take issue with that.

No I don't, it was mentioned on the forum here by a couple of people who did it. You will have to do some searching to find them. Doing a soft handing was never expressly prohibited during covid.
