Would her date of "established permanent residence" be the day she arrived in Canada?

We crossed the border into Canada yesterday, and we have a 6 month visa for her.

We are going to file a Spousal PR App shorty.
 
NO she is a Visitor with no right to reside there permanently. Landed immigrants means when person arrives at the Point of Entry with Confirmation of Permanent Residence Visa form

Her Permanent Residence status will began the day she enters the Canada with COPR. The date of entry on that form will be the effective date of PR. Are you planning to file the sponsorship application Inland or Outland?
 
Nope - as others have said, she's just a visitor.

She isn't a landed immigrant and hasn't established permanent residency. These things can't happen until she is approved for permanent residency and enters Canada as a new permanent resident. You should complete and submit the spousal sponsorship application as soon as you can to kick start this process.
