I have the PNP approval letter and was wondering if I can go the border with the required documents to extend my work permit - please advise.

Yes you can do that as easy as simply giving the required documents to the boarder officer and driving away with a new permit afterwards

Remaining in Canada

You have to make sure that you have legal status to remain in Canada. You should apply to maintain your legal status in Canada while your application for permanent residence is in process. You have legal status for the period of time indicated on your temporary resident permit.
