I've worked in hotels for around 2 years now as every type of position at the front desk, and I'd like to move to Canada. But I don't see Hotels as a skilled worker. I still see it as an entry level job, so what are the real chances of getting a job in Canada for an entry level job that must go through the LMIA process?

Quite non-existent.

LMIA is given to companies that show no Canadian is available for the job. The kind of job you are looking for is quite covered with the Canadian workforce (in fact those are qualified as survivial jobs, so many skilled workers do that kind of work, while they look for something else).
 
In hospitality, getting LMIA is going to be a challenge. If you have good education, work experience and language scores, you can try the following NOC.

For skill level 0, there is
0631 - Restaurant and food service managers
0632 - Accommodation service managers

For skill level B, there is
6311 - Food service supervisors
6312 - Executive housekeepers
6313 - Accommodation, travel, tourism and related services supervisors
6321 - Chef
6322 - Cooks
