Just out of curiosity..
How likely is it for you to have to have an interview if you provide lots of evidence???
 
That's not true. IF you provide them with sufficient evidence the likelihood of an interview on the grounds your relationship not being genuine is slim. Sometimes the IO might want to see the person to confirm things or if any questions were raised as a red flag. Another reason for interviews is something that may have come up in the background check. A lot of couples receive their PR visa's without interview. It does not mean you won't get called for an interview but if you do you shouldn't worry as it gives you a second chance to explain yourself. If your relationship is solid and have alot of evidence proving that I think the chances of getting called in for an interview is low.

We have been together for about 15 months.. (my husband is here on a work permit), for evidence I have lots of pictures, we have lived together for 6 months, we have a joint bank account and we have a daughter together. What else could we provide for sufficient evidence?
 
That is plenty good jdwhite21 :) You could show your rental agreement if there was one with both of your names... anything joint really.
The things that would raise flags is not supplying sufficient evidence in regards to your marriage. That it is continuing.. Family members not being aware of the marriage...

We live with my parents so we dont' have a joint rental agreement but would letters addressed to us at the same address suffice? I didn't even know that manual was there, lol I find the cic website very confusing.
