Im currently filling my Express Entry but I've been an independent Psychotherapist for 3 years now. What documents will I be asked to upload in case I need to fill an ITA?

You will be asked to upload nearly all of these, depending on your particular situation. The Proof of Work Experience section has a paragraph for self-employed workers. Note that if you needed a license to practice, you should include a copy of that as well.
