My wife will be sponsoring me for PR real soon. I am wondering if it is faster to apply from in Canada or outside Canada?

I have been living in Vancouver for nearly 3 years on a work visa. My work visa will end at the end of July if I don't find another job to sponsor my work visa again. I would hope to continue to live in Canada while my PR application is being processed. But am worried about living in Canada with an expired work visa and waiting for another company to sponsor a new work visa may take some time.

I know if I apply from In Canada, I can get an open work permit, but would it really take 5-7 months to get?

Outland is definitely faster. Since you are living in Canada, you could opt to have your application processed in the US where you would likely have PR within 6 months. If you go inland, you get first stage approval and work permit in 6 months but PR not until 1-2 years. If you want to continue to stay in Canada while you wait for your application and you don't find a new job, then you can apply to change your status to visitor visa.
 
If I find another job who will sponsor my work visa, can I then continue to work in Canada?

If you get a new LMO and work permit, you can continue working, yes.
