My wife and I adopted our son a few months ago. After a great visit with his Grandparents in NS and seeing how much he was thriving up there, we are seriously considering moving back to NS. My wife is a NS Citizen (Naturalized as a US Citizen 2 years ago). Assuming I can work out the work issues, we will be looking into it. The questions I have are as follows:

1. Do i need to fill out and file separate sponsorship forms/applications for both me and my son?
2. Assuming i am approved, can I "land" by crossing the bridge from Windsor/Detroit, give my In-Laws address for PR card, and return back to home in Kentucky until affairs (Job, Home Sale, etc) are completed?

No. Your adopted son is a Canadian citizen by adoption (assuming your wife was either born in Canada or is a naturalized Canadian citizen - from what you described it sounds like she was born in NS), so there is no need to sponsor your son. You however will require sponsorship.

Yes. Landing just changes your Canadian status from "foreign national" to "permanent resident" with all the duties and benefits of that new status. You don't need to remain in Canada right after landing (you will need to spend 2 years in Canada within your first five years, but time spent with your Canadian spouse outside Canada will also count towards that.) It is quite common for people to land and then return to their home country to settle their affairs.
