Letters written in Spanish by my wife, letters from friends and family explaining that our relationship is real, invitation cards from our wedding etc... would I have to get them translated first by an appointed translator???

Any documents and proof of relationship submitted to the CIC should be translated to either in English or Frech.

True. However, only official documents need to be translated by a professional translator. Cards, letters, emails etc. are unofficial documents and it's fine to translate those yourself.
