I applied for PR after getting invitation on 01 Sep 2018. I applied on 23 Sep 2018. My IELTS score expires on 19 Jan 2019.

Is it OK if my score expires during the PR application process or I have to submit a new one?

Since you have your PR process started already, there’s no worry!
My AOR was 30 May 2018 and and my IELTS expired on 16 July 2018.
And I got the PPR last week, so you know the answer
