I will be submitting my application as a spouse for express entry on 2 January, but my IELTS is expiring on 7 January 2019. Do I have to give my IELTS again after getting ITA?

Not required as far as I know. Once eAPR is submitted, your IELTS is locked. That is my understanding. Good luck.
