So I got my PGWP extension in the mail yesterday and need to renew my SIN - i’ll be applying online tonight. My question is, can I keep working while it is still processing? Do I also need to tell my employer anything? If so, what should I tell them? Lastly - I need to file my taxes, will the expired SIN work?
 
You can continue to work. Go to Service Canada and they will renew it for you in less than 15 mins.
No need to tell anything to the employer (If you filed for PGWP extension before your earlier visa expired).
In short, if you were under implied status and your application got approved, go to service Canada to renew SIN

When I submitted my application my old status was still intact - and I just got the new one yesterday - so that's covered. As for time limits, is there a deadline? Earliest I will likely be able to go is Monday (work is incredibly tight the next two days) - lastly, can I currently file my taxes under my current SIN?

I did the same thing. As soon as I received my Extension, I waited a week for the actual Permit to arrive, then went to Service Canada. Don't know bout the deadline though.
