Hi

You have to declare it, otherwise it could be seized and you could be fined, but you don't pay taxes on it.

As for the idea of carrying that much cash on holiday, not too smart. I suggest you bring a credit card instead to avoid the unnecessary hassle and risk.

as canuck mentioned declaring is important if you don't want to lose it all. Also, if you are carrying a good amount it is advisable to bring some proof of bank statements or work you do as it can prove that money is legit not black.

The other thing is that if you are carrying that much money, you should have a VERY good reason what you need it for.
Otherwise, they might think that you are bringing in enough to stay beyond your permitted time and not return back to your home country.

Anything over 10k in cash you need to declare. Canada is safe country I have not heard of issues with pick pockets here however it is best to protect yourself, use credit cards or travelers cheques.

Airports are notorious for pick pockets anywhere in North America, sadly. It's one reason you're not supposed to set your purse down for any reason (or briefcase).

You are right all airports have pick pockets but compared to other jurisdictions we are safer, according to an Insurance Company survey the worst place for pick pockets is South of France.
