I will soon graduate in one of the best universities in Brazil as an economist. I think i can score close to the tens on the english exam aswell. Does the tier of the university counts towards the grade you get in education?

I think the job offer and sponsorship phase would not pose a challenge too.

How would you rate my chances? Do i need to learn French aside the Advanced/Proficient english, i'm 25 btw.

See if you are eligible to immigrate. You need one year continuous skilled work experience to be eligible.

The Express Entry mentioned is for PR application.
First, check your eligibility based on the selection factors (refer to @Naturgrl 's reply above)
Then, if you passed eligibility, calculate your CRS with this tool: https://www.cic.gc.ca/english/immigrate/skilled/crs-tool.asp
And compare your CRS (score) against the recent draws: https://www.canada.ca/en/immigration-refugees-citizenship/services/immigrate-canada/express-entry/submit-profile/rounds-invitations.html

However, please note that there are several programs under express entry. If you have no Canadian working experience, you may only be eligible for the Federal Skills Worker program, which has not issued any invitations in 2021.
