I previous job was as Decorative Arts Assistant (no idea of the noc?), and I was never given any kind of contract as it was all fairly informal. Small auction houses tend to be that way.
How do I go about collecting the proof that I worked for them? A letter signed by the CEO? I was payed every two weeks via interac, so no cheques ect. I do have a T4 from them however.

First, make sure whether it is a skilled NOC or not. (Skill level C is not eligible). You have to chose an NOC based on the lead statement of an NOC and the job duties and responsibilities. Job titles are merely suggestive of the correct NOC.

I don't know what a "decorative arts assistant" does, so it's hard to help. But possibly

You have the T4, so no need for paystubs.

On this website, under "proof of work experience" you will see what info is required in the letter of reference. Can be written by a direct supervisor/manager, CEO, or HR person.
