I mean it shows they signed for the package but I was wondering if they will send a letter saying they are beginning to process. They received it about two weeks ago

Within a few weeks you should be receiving AOR that is an "official" confirmation that they have received your application. However, some people don't get that until they get their Sponsor Approval, which normally comes after AOR. SA is taking around 40 days right now, but it could be longer or shorter.
