Can someone clarify this for me. We submitted our application. After sponsorship approval, is it possible to go with my spouse to his home country while we wait for his visa (he is currently in Canada with me)? I dont want them to think we will not return once the PR is issued.

Assuming you applied outland... If you are a Canadian citizen - then yes. If you are a PR - then no, you must remain in Canada while the application is being processed.
 
I am a citizen. I was reading somewhere else this may cause them to reject the visa? I am worried as I really dont want that to happen. Would I have to notify them? I would be on a tourist visa.

& yes we did apply outland
 
If you are there for a long time, and the visa officer finds out, then he/she will want evidence you will return to Canada. You'll be given a chance to submit this evidence, though, not just rejected without a chance to explain. If there is an interview, the visa officer will find out - there is certainly no reason to hide the fact you are living with your spouse; doing so is good evidence the relationship is genuine, at least.
