My question is: My work permit expires 5 months from now and they have delayed her CoPR. What can I do now to extend my work permit and apply for my permanent residency under her as a dependent...

Did she declare you on her PR application? If she lands without doing this, she can never sponsor you. This is a very strict rule. She must add you now as a spouse before she lands, and you can choose if you want to be added as accompanying or non-accompanying.
The PGWP is not extendable. I would suggest getting added as an accompanying spouse.
