You can sell them and deposit the cash in the bank, for the time being. You can buy more gold once you are in Canada.

No it does not. You must have the money. And also if you plan to sell your gold in Canada, prepare for a very very low rate. Gold is bought at around less than 35% of what it is soled for in Toronto. ( I don't know about other places)
