Read the visa office specific instructions for the office where you are applying, if it says copy, they don't require notarization, so just do the ones that require notarization, for the other a photocopy is fine.

from document check list for your local visa office check the words,
copy/photocopy (some documents needs only copy)
notarized copy (some you need to notarized)
original documents (some you need to send original like IELTS, PCC etc)
