What is required to claim the full points for foreign work experience,3 years straight or 3 years in total?
 
For EE it counts all years of experience in total in all NOC 0, A or B.
For FSW years in primary occupation do matter (also NOC 0, A or B)
All of them should be within past 10 years.
Don't forget it should be full time (30 hours per week or more) or part-time equivalent.

Remember, you will need to supply evidence of your employment, such as references, contracts, pay slips.. and/or tax docs.

I know but as fas as i know its not needed unless asked for

That is not true.

Employment letter is mandatory and has to be submitted with your application.

It has to include job title, duties, salary, hours worked,...

If you fail to submit the letter to prove your employment claims your application will be refused for being incomplete.
