Me, my wife and kid have been in Canada for 6 odd yers now and causally know lot of people for more than 2 years though none of them would know/care where we work or what's my exact height etc...

They wouldn't qualify as our "friends" but they trust us enough to be our references/guarantor.

So my question:
how important it is for your references and guarantor to know details of every facet of your life?

Is a strong friendship with them necessary?
and for the "Relationship to applicant" question, Is it okay for them to say "casual acquaintance"?

There is no measure of 'relationship' or 'friendship' that is defined. They should know you and should be ready to answer questions if there is an inquiry. Very similar to a reference in a Job application. My reference can probably talk about my work and how long I was with the company. They cannot talk about my personal details such as my age, or height or mothers maiden name.
