what is the possibility of CIC finding that someone has used false document (e.g. false employment letter) after their PR application got approved and they moved to Canada?
If they find out about this, will they also cancel PR of dependents (children) of the main applicant who are now living and working in Canada?

Why do you ask this question?

It is very likely they'll find out considering a lot of people try to enter using false documents

If they do find out, it will be considered as misrepresentation of documents and all their PRs will be cancelled. If you could fake one document what other things can they fake (passports, birth certificates, marriage certificates, death certificates, education certificates, work experience, etc)

if it is very likely then how come CIC did not\was not able to find out about it in the first place before approving the PR application? do they really go through all applications and double check them after they got approved?
why would they cancel PR of dependents, they have not made false statement. what if the dependents are not Canadian citizen?

Its quite possible they got lucky submitting fake documents, just like most things it is not 100% fool proof. If they do an audit and verify documents or someone complains they have the authority to cancel PR and the reason for that it simple as I mentioned above, if someone can submit fake documents to get immigration what other deceitful things are they capable of doing? Its basically misrepresentation and is considered as a criminal offense, the Canadian citizenship of dependents will automatically become void because they are related to the same file for immigration/sponsorship. The government will issue formal letters to people who have obtained Citizenship due to false representations.
