I am enrolled at GBC college. They said I cannot take break because I started my college in Jan intake and we can only take break in May. She said if I take a break it will be an unauthorized break. What does this mean?

I do not have any break for now. I need a break to calm my head with study overload. I have already completed 2semester and this is my 3rd semester now

So it would be an unauthorized break so don’t work. You would not be eligible for a PGWP, and the college can contact IRCC to cancel your study permit since you are not studying.
To have it authorized see you doctor/therapist to approve a need for a semester break and then submit to your college. The college can then put you on medical leave/authorized leave.
