Do we need reference letters from all the employers we have worked with or the recent ones are sufficient?
Also, my previous company has closed down and I do not have any employer/ employee working in that company. Can I get a reference letter from my ex- manager ( who is also NOT working for my previous firm)?

If you are counting points for all your employers then yes. Letters must be on company letterhead but if closed you can try with a letter from ex-manager. Include your contract, paystubs, etc if possible. In the link is the list of what must be included in an employment letter.
