I have over 6 years of skilled work experience with my current employer, with duties matching my NOC (not word by word).

Do I need to go back to previous employers to get their letters of reference? In other words: demonstrating over 6 years will make any difference, or the reference letter of my current employer (which already agreed to provide it) is enough? I understand it's way over the minimum requirement amount, but I don't know if adding more is actually good for the candidate, or would just create additional work to the examiners at no avail.

I would recommend only mention your current experience, since more than 6 years of experience have same points. Your profile will be processed faster since they will have only one employer to verify. I had similar case and got PR in 67 days.
