Will it look bad on my application to include jobs that I only stayed at for 1 month or 2 months?

These jobs are necessary to show 1 full year of continuous work.

Would it be a good idea to ask the employer to provide a reason for leaving the job on the employment letter? Provided said reason is something related to finding other opportunities closer to home or with better pay?

There is nothing wrong with that and you can add such small experiences before embarking on final job. However if IRCC decides to verify those position you had in the past, they may reach out to HR/person responsible for your employment and suppose one of them is not responding to IRCC's call that might add up into processing time.

I have one more question to ask, I hope you can help.

is it okay to have the employers make it as such that I worked the full 2 months as opposed to the duration being 2 or 3 days less? (job transition period)

that's for the purpose of showing 1 year of continuous work and amounting to 3 years.

PS. I have 2 years of continuous work after that 1 year period of constant transitioning in NOC X.
I also have 1 year and 10 months of experience in NOC Y that overlap over NOC X.

If you were paid by former employer during that transition period (2/3 days) then yes otherwise no but I could be wrong.
