If I have a reference letter on the letterhead of a previous date (just after I left that job), but the company's location has changed since then do I need to mention this in the application or give another reference for that?

The facts aren't clear. If you mean you have yet to submit eAPR and you have a LOR from a past employer on a letterhead with an old address, then I would strongly suggest you get a new LOR with the updated address. You don't want to be in a position where CIC attempts to contact your past employer just to get "sorry yo, this ain't the place you're looking for" response. Having said all this, if getting an updated LOR is not possible, then adding a LOE with the updated addresses and contact information should do the trick as well (since this is a past employer).

I have obtained the ID's copy of one of the senior employees there that has the current address on it...

Yes, I am yet to submit the eAPR.
