Does my Spouse need to fill this in?

In form IMM 5562 "Your Travels", I need to list the places I have been on holiday over the last 10 years. There is a separate box for my spouse. My spouse is Canadian and is my Sponsor.

As she is not immigrating, do I still need to complete the travel details for her, or do I just need to complete the travel details for myself only as I am the only applicant?

no, the "spouse" being referred to is when 2 spouses are being sponsored TOGETHER by a third party. For purposes of filling out forms, your spouse is not your spouse, they are your sponsor, and only needs to fill out forms specific to the sponsor.
