I already sent my passport to CPC to get my PR stamp. Although we applied outland, I currently live in canada on a study permit and intend to flag pole when I get my passport back. Does my sponsor need to come with me when I do this? She works on call at a hospital so it might be tough for her on most days.

Also, if I do go alone, could they request an interview with her at a later date? If that's the case, I might as well just take her with me on a day she isn't on call.

I would say absolutely not. Once she lands as a PR, she is a PR, there are no further interviews required.

Inland landings do require the sponsor to be present, but in this case for an outland landing, sponsor does not need to be present at all
