Can I get my passport dispatch email on Fridays, Saturdays or Sundays because I don't think the courier will send on weekends

From what has been seen before you could get an email from them any day of the week. I have no idea what the courier companies do in your country.

When they dispatch it, you will get an email with a tracking code. I don't know where you are, but I got my passport back on a Saturday when I was in India. It is possible.

It depends on where you are in India (Big city or smaller town) and where your passport when for stamping (Delhi, Bengaluru, or Chandigarh). Can take about a week or more.

I got my POE yesterday and I am waiting for my passport to get dispatched. Is there possibility to get it by 19th at least in your opinion? The passport will be couriered from vfs to my country's embassy in delhi but I haven't received dispatch email yet.

Did you check GCKey? If the passport is stamped, the counterfoil details are updated in GCKey. Then you know the passport is ready to be sent back to you. It could take longer than 19th. As it goes back to the VFS from the embassy and then they will send it to your house.
