I will be arriving in Canada in a few weeks as an international student. I have my visa inside my passport and the Letter of Introduction given to me by IRCC.

I am planning to bring:
- Passport (Visa stamped inside of it)
- Letter of Introduction
- Offer letter from university
- GIC certificate (Proof of funds for my stay in Canada)

Am I missing any important documents I should bring? Also, for the proof of funds for my stay, I only have my GIC because I applied under SDS, will this be enough?

Yes the documents listed by you are sufficient but do carry along all your academic documents and IELTS result

Are transcripts and IELTS result mandatory to bring? Because I am transitting several times and is going to have to bring a lot of documents already. More documents might cause confusion and might result in me losing some of it , so I just want to bring the crucially important documents.

They are not mandatory but recommended as even if they are not required at POE you may require them at a later stage. My advise make two folders one that contains mandatory documents and an another that consists of other important documents.
