• I am confused with the immigration documents : Record of Landing or Confirmation of permanent residence and PRC. I have the PRC but not sure what are the other 2? Is one of them the landing paper? I don't think I have it.
• About the language proof, I only have a accounting certificate from a college. Is that ok?

These are papers used for first landing in Canada when you got visa for permanent residence. You should have one Record of Landing or COPR.
In my opinion your certificate will not valid for Language proof . You can get details from CIC website .

This is stated on the CIC website: A diploma or certificate from a secondary or post-secondary school indicating successful graduation from a program conducted in French or English, either in Canada or abroad.
:-[ So I am thinking a certificate might be ok?
 
Yeah, it's valid if you studied in hours the equivalent of one year in order to get that degree. I sent my College certificate also as a proof of language.
