Does one need to upload all the documents at once while submitting the application. Because I don't see where the document is uploaded once I do so, does it get saved until you submit even if it is after few days?

No, you don't need to submit them all at once. You can upload documents as you get them prepared and just click on "save and exit", which will upload your documents to CIC and save them there.
