Do you have to indcate a preference of communicaion with CIC in your application

If so...I missed that part.

Since they have email addresses for both applicant and sponsor, on our respective forms, does that in and of itself indicate that this will be the standard method of communication?

If not, can I do anything about it??

As much as I adore Canada Post, I can't imagine waiting for news via snail mail. :-\

If you provide an e-mail address, they will use that as the primary form of communication.

I should clarify that during sponsor approval, they will use the e-mail address for the sponsor. When the file is transferred to the visa office, they will then use the e-mail address of the applicant.
