Do we need to book return flight for temporary visit

I just wanted to know that do we need to book return ticket if someone is travelling with visitor Visa?

Also I heard that we can book open return ticket that can be booked without return date but can be booked anytime within six months. How to book ticket with such an option?

Yes - you must have a return flight (unless you hold a super visa). Airline most likely won't let you board the plane to Canada without one.

Yes - you can book an open ended return. If you don't know how to do that - suggest you work with a travel agent to book your flight.

You will need either a return ticket or a ticket out of Canada (to antwhere else) to be allowed to board the plane (again, speaking from personal experience on several occasions).
