I arrived in Canada with my Canadian husband in 2014. I have a 10 year visa in my passport. No date on my passport on entry so that means I got 6 months to stay in Canada. 1 month before my stay was to expire I applied for 1 year more and it was granted.
It now expires on 28th February 2016. We have decided we want to stay in Canada.

If my husband applies to sponsor me now sending out my application by mail next week by 25th January, 2016 will I still have to apply for an extension to stay longer?
 
Depends how you apply. If you apply outland - yes, you need an extension.

If you apply inland and inlcude an open work permit application with your submission - then no extension is required.
 
Okay, we will apply inland since we live in Canada and also apply at the same time for an open work permit.
I guess if by some chance my husband is not accepted as my sponsor I would be given a date when I have to leave Canada.
Is that correct?
 
Where are you from? For most people, outland is the significantly better choice. You can apply outland while you are in Canada.
 
I am from Belize, in central america.
Would I have to travel back to Belize during any part of the outland process?
 
Another quick question.
Do I include the application for my open work permit in the same envelope with the papers where my husband applies to sponsor me inland?
Where can I find the open work permit form. I only see forms to apply from outside of Canada
 
Found the Open Work Permit form.
It asks Details of Intended Work in Canada. I have no idea what or for who I will work yet, or the duration of my employment.
Do I leave that blank?

Belize apps are processed in Mexico City, which averages less than a year. Provided you have no red flags that would trigger an interview, there would be no need for you to leave Canada during the process.
