Diplomas and Transcripts

Am I correct in reading that we only have to submit trancripts and diplomas for anything above high school like Bachelor degrees and Master's. Or do they also ask for High School information and grades?

Check appendix A for your visa office. At my visa office (buffalo), we don't need to submit school certificates.

I have read here that some people get asked to prove the total years of schooling, even though they do not ask for transcripts.
Is this true? I am applying in London from UK.

If they don't ask in the appendix or in their visa office website or specifically asked, you don't need to send it. They can ask you to prove anything later, whether they asked for it or not because ultimately they have to protect their security.
