I've been pretty good with knowing dates for the first two times I came to Mexico, and in the letter I am writing, I've included the dates. The third time in Mexico, however, I'm a little less clear. It was pretty hectic. We were both running around in my wife's state capital for three days getting the things we needed to get married, and while we enjoyed the time there, we were getting things done really fast and didn't keep too close an eye on what dates we did what. Once we arrived back to her town, however, things quieted down became less hectic and stressful, and the dates are a lot clearer. Is the VO looking for exact dates here, or is it acceptable to just have a rough estimate? Thanks.

This is just for me.

I think if it's more than a decade or so, year is a must to remember.
I think if it's more than 5 years or so, month and year is a must to remember.
If it is less than 5 years, I would say exact date is a "must".

I don't claim anything here regarding how CIC looks at your papers but that's what I think.

PS: check your passport, it should say there when you landed to mexico.

I know when I landed in Mexico (February 5), but during the three-day period (from February 5 to 7) we were running around getting things ready to get married, like visiting INM, etc., I am unclear as to the exact date. It's either February 6 or 7.

I think you'll be fine. 1 day of difference is not a big deal unless it's the date you got married, but of course that is very unlikely to happen. Which one are you trying to date btw?
