Hi.
So for birth certificates and other papers they ask for copies...when the original papers are both sided and on color. Do you normally do color copies? Do you do each side on one page or you do them double sided like the original ones?

color copies are not mandatory. black and white are perfectly acceptable. it's recomended to do single sided copies. there is less risk the visa officer will miss the information that way.
