I may be returning to Canada before my partner's visa is approved - he may come to visit me, temporarily, but would also like to spend some time visiting his family etc, around the country, before moving to Canada. He and some friends may possibly plan a big backpacking trip (like 3-4 weeks) while I am in Canada.

We live together now, and own the house we live in, and aren't planning on selling the house until his visa is approved. If he decides to travel for a long stretch, can we change his mailing address to my Canadian address so that any communication between him and CIC doesn't sit in our mail unopened? Or will that raise red flags if he is not actually in Canada? Should I just tell him to stay closer to home, no big trips to avoid missing requests / notifications from CIC?

It is perfectly okay for you to receive his mail in Canada, regardless of where he is living/visiting during processing. There is no residency requirement for outland applicants, so while he keeps his residential address in his home country, any correspondence from CIC can be sent to him, through you, in Canada. Not a problem - no red flags.
