I've been married to a Quebecois for more than a year now and I am in the process of collating and completing all my requirements for the Outland/Family Class citizenship application. Thing is, my husband is currently working for a cruise line and he travels and is away from Canada for 5 to 6 months at a time and then returns to Canada during his vacation for 2-3 months. He does not live in any other country since technically he lives onboard a cruise line that sails from port to port and he does not live in any country at all. With this situation in mind, we are confused with how to fill out the application properly. Would my husband be considered as someone who is living "exclusively outside of Canada?"

Also when I get approved and when I move to Quebec, does my husband/sponsor need to resign from his job in the cruise ship as stated that the sponsor needs to move back to Canada?

I would say no. I assume he has an established residence in Quebec? In this case he's just traveling for work, but actually "lives" in Canada.
Though this is a unique situation so you could make arguments either way.

Since you haven't been married for at least 2 years at time of submitting the app, you will get "condition 51" conditional PR status.
This means that after you land as a PR, you and your sponsor must live together for 2 years. If you aren't accompanying him on the cruise, then spending 5-6 months apart at a time may present problems.
 
I was staying in the UAE on a tourist visas (renewing them every 30 days) with my husband for over a year when we applied and I did not consider myself living exclusively out of Canada simply because of the fact that I had no status (other than visit / temporary) in any other country. So on my forms, I indicated that I was a resident of Canada.

Once I obtained residency overseas, I immediately sent an update to CIC...

Their forms make it somewhat confusing...cause there are specific definitions when it comes to "residency" and "living" and "exclusive" etc...

I am a resident in the UK at present (and I will be when we submit our application), however I will be moving back to Canada in July for University. Do you have any advice as to whether I should consider myself "exclusively living outside Canada," then update then when I return to Canada? Thank you in advance for your help!

Are you Canadian citizen or PR?

Always apply based on your situation when the application is submitted...in your case you would be living exclusively outside of Canada. The only thing this triggers as far as I know is you will have to provide proof of intent to return to Canada which in your place will be easy to do.
